CAJUN CHICKEN WITH CHUNKY SALSA
Prep time: 20mins (Plus refrigeration time) Cooking Time: 20 Minutes Serves: 44 Single Chicken Breast Fillets (680g)1 Teaspoon Cracked Black Pepper 2 Tablespoons finely chopped Fresh Oregano 2 Teaspoons Sweet Paprika 1 Teaspoon Dried Chilli Flakes 2 Cloves Garlic, crushed 2 Teaspoons Olive Oil CHUNKY SALSA2 Mediium Tomatoes (300g) chopped coarsely1 Small Red Onion (100g) chopped coarsely1 Medium Green Capsicum (200g) chopped coarsely2 Tablespoons coarsely chopped Fresh Coriander2 Teaspoons Olive Oil 2 Tablespoons Lime Juice1. Place Chicken in large bowl with combined remaining ingredients; toss chicken to coat mixture. Cover; refrigerate 15 minutes.2. Meanwhile make chunky salsa.3. Cook chicken in large lightly oiled non-stick frying pan until cooked through. Serve chicken with salad.
